I've been really enjoying your writing. I work in a professional kitchen and we're trying to become zero waste. Do you have any ideas/recipes for potato peas? Besides composting. I look forward to hearing from you.
Thank you! I'm glad you enjoy my newsletters. As for the potato peels, I fry them in olive oil, sprinkled with a little salt and pepper. They are delicious! You can also bake them. If you chopped them up a bit, you could also add them to shredded random vegetable pancakes, maybe with some carrots or parsnips and more potato. Apparently you can make a weaker vodka with them but I haven't tried that.
I go to a spiritual group. We meet in a local park community center. The emphasis is on the god inside you. Great music. My fave lyric is “my religion is kindness.”
I'm always inspired after reading one of your posts. This time I followed your link to Buy Nothing and signed Up. Thank you for your commitment to sharing all your good practices and ideas.

Amen! These are great and we share a similar brain wave. I don’t work in an office anymore but that idea is truly brilliant!
