So many great ideas! Sad vegetables need love too. I keep a washed out OJ carton in the freezer to house veg and herb scraps from prepping chopping. Once full, I throw it a big pot with a whole chicken, peppercorns and water to make a homemade broth and cooked chicken meat to enjoy for days.
I'd love to see an article about how to preserve leafy vegetables for later. I grow a lot of kale, chard, spinach, etc but don't know of any way to preserve except frozen, and then they can only really be used in soup.
I also grow a ton of spinach. I dehydrate them and then place them in canning jars to store. Anytime I need spinach, I just add a handful to everything including my eggs.
I’m a zero waste fan, all organic everything, all whole fat everything. Love this braising idea. I shop about once every 2 weeks and have it down to a science. Eating fresh veggies and fruit to the very end. I learned a lot during the totalitarian lockdowns.

I have never thought of using braised veggies in a quiche or on pizza. Great idea, can‘t wait to try this!
